Farm-made Sainte-Maure-of-Touraine
This cheese is in a clylindrical shape and is made from raw goat's milk. When the cheese is taken out of its mold, a long straw is inserted, the purpose of which is to hold the fragile cheese together and to ventilate its interior. The cheese is then covered with salted powdered charcoal. It is fine-textured, smooth, and firm. The cheese is mature, balanced, round, with salt, sourness, and an aroma of walnut. As it matures, a blue mould forms on the rind, which appears dry, but the full flavour of this cheese remains in one's mouth.
A bit of history...This cheese dates back to the time of the Moorish invasions of the 8th and 9th centuries, occupying this part of France. When they were expelled, they left behind not only goats, but also recipes for making cheese from their milk.
